My Menu for our Dinner Guests
We were so excited when our friends, the McKee’s came over for dinner last night. They live in Florida and we love to get together with them whenever we go to Disney but we’ve never had a chance to have them in our home! We even went on vacation together last summer and had an absolute ball. So when it came time for them to come eat in my kitchen, I wanted to put on a spread!
They ended up staying so late that they remained in Huntsville for the night and we’re getting together again today to enjoy the fun company before they head back. So in lieu of a post, I thought I’d bring you links to everything I cooked.
Griled Chicken Tenderloins – without the grill
This is one of Ricky’s favorites and we hadn’t had them in a while so I had a hankering 🙂
Fresh Fried (Creamed) Corn
Katy Rose and I shucked a good bit of corn and we served it fried, or creamed as I think most of you call it. Here is a link to that recipe complete with shucking and freezing instructions! There is NOTHING like fresh fried corn. I’d pick it over a dessert any day!
Sweet and Sour Green Beans
I also call these “Country Green Beans” and they’re just plain good!
Creamy Macaroni and Cheese
You know how us Southerners like our double and triple starches with meals!
Hoe Cake
This is my family’s version (not the kind with corn meal) that comes out like a wonderfully fluffy biscuit with a crunchy crust. I served it with honey and molasses.

Okay I just made this because I’ve been wanting some and I wanted to have folks here to help me eat it 🙂

Candied Dill Pickles
… and those Candied Dill Pickles that Julie Hutson shared the recipe for. I’ve made three jars this week!
I also put some garden fresh sliced tomatoes on the tray as well.
Dessert was a Totable Banana Pudding, a bit of a spin on my traditional banana pudding recipe but one that keeps better so you can make it well ahead of time. Of course, I took photos so I’ll be putting the recipe on Southern Plate soon!
Afterwards the McKees spoiled our four legged kids completely rotten. This is Kent McKee and Zoe.

Maralee and I were thrilled to discover that we are both going to be writing books at the same time! I told her it was like we were carrying babies together! Christy, I have tenderoins marinating as I type this! I am excited to be cooking these and your green beans this evening. I was curious how well your green bean recipe reheats? I was wondering if it is better if the bacon is nice and crisp or does it matter? Thanks!
I made the chicken and it turned out perfectly… exactly 40 minutes! I was able to turn the heat from around 5 to 3 or 4 for the last 5 minutes or so to keep from over-charring. Delicious! I am new to your site and am in love! I’m an Alabama girl and have grown up of your type of home cookin’! Just purchased your cookbook for myself and for a friend. We both enjoy it very much. Keep cookin’!
Made the chicken and the green beans yesterday along with mashed potatoes. The meal was absolutely wonderful. I even loved it and sometimes my expectations are not met when I cook a meal. My husband kept on and on about it too. This is the only way I will fix green beans from now on. Thanks bunches.

Sounds so yummy as usual! I have made about 15 of the recipes out of your cookbook and they just keep getting better and better..saw somewhere you mentioned cooking pork tenderloin but can’t find the recipe. HELP!!! Keep up the good work, your recipes are the best! Fried corn just like I make here in the NC mountains too! Have bought 2 more cookbooks for Granddaughters!
Oh my gosh. Just got up and looking at the pictures of your meal has my tummy growling tremendously.
My week end plans. I have a friend who pulled into the campground about 20 miloes away . She lived accross the street from us when were were in Jr. high and high school. We have remained in touch all these years but are getting together this morning for the day for the first time in 45 years. We have both married have kids and grandkids and I have great grandkids. We are going this afternoon to my youngest daughters house to celebrate with the family my grandsons graduiation and a going away party for him as he will be leaving for the Marines in a few more weeks. My daughter is really looking forward to meeting Jill and my daughter Jill is named after this friend. Going to be a great weekend for me.
Can’t wait to try the pickles and the green beans and hoe cake. I’m working today but afterwards we are having a pool party for our newly turned 10 year old grandson for his BD. 10 year olds like pizza, so will have to wait until tomorrow to try out the great food ideas you have given. Congrats on the 2nd cookbook- bought the first and recommend it to everyone. Thanks for starting my workday with a smile.
