Hey Lilly! She’s fine. In fact, today is her birthday! She’s gotten busy with grandkids, three live with her and she keeps two more during the day so I’m afraid my little family doesn’t get to see much of her these days.
A belated Happy Birthday to your mom! I always think of her when I make her Scalloped Potatoes, which we love and my husband requests all the time. Plus, I had never made my own cheese sauce until that recipe, so I think of her as having taught me how to make one. Like she said in that recipe post, it can be used for mac and cheese, which I’ve done several times now.
Also, I’ve made your mom’s Cheese Lover’s Chicken Pot Pie too many times to count now. It’s a favorite of ours, and my mom makes it often too. Plus, I just tried your mom’s Chicken Enchiladas the other day and they were sooo good. I can’t wait to make them again.
Your mom sure sounds busy, but she and the grandchildren are lucky to have so much time together!
