Easy Apple Pie Muffins

Well, these apple pie muffins take just 10 minutes to prep and use ingredients probably sitting in your kitchen right now, like all-purpose flour, brown sugar, unsalted butter, and just a couple of apples. Soft, fluffy, and most importantly, moist on the inside, they’re complemented by the perfect crumbly and buttery cinnamon streusel topping. Recipe Ingredients

Filling

  • All-purpose flour
  • Baking powder
  • Teaspoon salt
  • Egg
  • Buttermilk
  • Unsalted butter, melted
  • Vanilla extract
  • Light brown sugar, packed
  • Large granny smith apples, peeled and chopped (2 cups volume)

Topping

  • Unsalted butter , cold
  • Light brown sugar
  • All-purpose flour
  • Ground cinnamon or apple pie spice

Preheat oven to 375 degrees. Prepare a muffin pan with liners or spray with a non-stick spray.

Flour in large mixing bowl.

In a large bowl, whisk together the flour, baking powder, and salt. Set aside.

In another bowl, mix the egg, buttermilk, melted butter, vanilla extract, and brown sugar.

If the apples aren’t chopped yet, chop the apples before mixing the wet and dry ingredients together.

Pour the apples into the flour mixture, pour in the wet mixture, and fold together with a spatula just until combined.

It’s important not to overmix the filling. It should look like this.

In a small bowl, using a fork, cut together the ¼ cup butter and brown sugar until crumbly. Add in the flour and cinnamon or apple pie spice, and continue cutting the butter in until everything is combined.

Fill the muffin pan wells all the way to the top with batter. Sprinkle the topping mixture over the apple pie muffins. Bake for 25 minutes or until a toothpick inserted in the middle comes out clean.

Cool on a cooling rack. Enjoy warm or cooled and store covered at room temperature.

Storage

  • You can store these muffins in an airtight container at room temperature for up to five days. However, if you live in the humid South, you might want to pop these in the fridge instead, as the moistness can turn into moldiness quickly in hot temperatures.
  • Alternatively, individually wrap or freeze your batch in a sealed container or freezer bag. They’ll last in the freezer for up to three months. Let them thaw for three to four hours, and then simply reheat in the microwave for 30 to 60 seconds. Alternatively, individually wrap the muffins in aluminum foil and place them in a 350-degree oven until warm.

Recipe Notes

  • Ensure you peel and chop your apples into small pieces. See the photo above if you’re unsure how small the pieces should be.
  • You don’t have to use Granny Smith apples in this recipe. Other good options include Honeycrisp, Gala or Braeburn apples.
