Biscuit Class – Classic 3 Ingredient Biscuits

Good Morning! Last weekend I got together with a few of my friends who claimed they couldn’t make good biscuits and taught them how to make three different kinds! Everyone’s biscuits turned out beautifully and the great news is that my husband recorded the whole thing so I can bring my Biscuit Classes here to you, as well.

This is the first time we’ve done something like this so there are kinks to work out, of course, but I think this first effort turned out pretty good. We hope to purchase another camera before recording the next series of classes, so you can see my friends off camera more throughout the class. All in all, I think the video makes you feel like you are there, which, for me, is the next best thing to actually having you there :).

  1. Really enjoyed the video. I have gotten out of the habit of making biscuits from scratch and just use the frozen Pillsbury packages so I can bake just a couple at a time. Wonder how these would be to freeze for use later? With just two of us, it’s a waste to make a bunch.

  2. I loved the video. I have really been experimenting with my biscuit making here lately. I have found my best biscuits are when I use 1/2 stick of unsalted real butter. (I use Crisco if I don’t have butter, but really like the butter) I grate it while it is frozen and then mix in lightly with 2 cups White Lily (is there really any other) flour. Then add in about a cup of buttermilk. I knead very little and lightly and then just pinch off and roll in my hands and pat out on my Silpat on baking sheet. The trick is to have very cold ingredients and not let them get too warm. And like you said…only lightly knead and then make sure sides are touching. If I don’t have buttermilk, I usually always have sour cream on hand. I will use about 1/2 cup regular milk and add in enough sour cream to make a cup. Just stir it up and it looks like buttermilk and works really well. I have to admit…for years my biscuits weren’t good…yep..I was overworking the dough. Oh..and I have used the pizza cutter trick too. Square biscuits don’t bother me at all. Buttered with preserves…yummy!! Can’t wait for the other videos.

  3. I’m one of those people who believes they can’t make biscuits, too. I usually wind up with dry hockey pucks. I always thought it was from using too much flour, but the amount of flour you put on your board to knead makes me think otherwise. You’ve given me the courage to try again. Thanks! 🙂

  5. I loved this video and thank you for the recipe to make buttermilk! I loved how you used the scraps. Can’t wait to try the biscuits.

    I go to a country restaurant and the owner says she uses her leftover biscuits to make peach cobbler. Do you know how this is done? It is delicious!
