Stuffed Baked Apples
These stuffed baked apples scream fall dessert, as they’re loaded with the most flavorful and cinnamon-spiced oats and brown sugar filling.
Why make this stuffed baked apple recipe? Well, there are quite a few reasons. Firstly, apples are currently in season so their flavor is at its peak. Secondly, with a crispness to the air, who doesn’t want their house to smell like apples and cinnamon at the first sign of fall?
This recipe is so simple to make and produces enough to keep a whole family happy. Every tender apple half is stuffed with the most perfectly sweet, spiced, and flavorful filling imaginable. It’s a delectable combination of vanilla extract, brown sugar, oats, cinnamon, allspice, flour, and butter. It’s like an apple crisp filling inside an apple — what more could you want?

Recipe Ingredients
- Butter
- Vanilla
- Brown sugar
- All-purpose flour
- Oats
- Allspice
- Cinnamon
- Hot water
- 4-5 apples
How to Make Stuffed Baked Apples
How to Make the Stuffing
Melt butter in a medium-sized bowl and then add all of the dry ingredients: brown sugar, vanilla, flour, oats, allspice, and cinnamon.
Stir stuffing until well combined.
Slice each apple in half and remove the stems.
Using a spoon, scoop out the core of each apple.
Pour 1/2 cup of hot water into the bottom of a 9×13 baking dish and place the apples inside, with the cut side up.
Sprinkle about a teaspoon of cinnamon over the tops.
Then, stuff each apple with the filling mixture.
Cover with foil and bake for 20 minutes. Remove the foil and bake for another 35 minutes.

Serve on their own or top with a scoop of good quality vanilla ice cream and a drizzle of caramel sauce.

Storage
Store leftover baked apples in an airtight container in the fridge for up to 3 days and reheat in the microwave. I don’t recommend freezing leftovers.
Recipe Notes
- Use dairy-free butter to make vegan baked apples.
- You can also adapt the spices to suit you. Substitute the ground cinnamon and allspice for apple pie spice or pumpkin pie spice instead. Alternatively, swap the allspice for ground nutmeg.
- If you like, add a 1/4 cup of chopped nuts or dried fruit. This might be chopped pecans, walnuts, or hazelnuts; raisins, cherries, or cranberries.

When I first got your newsletter with this recipe, I took a quick look at the photo and thought it was diced turkey on a roll with a scoop of mashed potatoes, drizzled with gravy. My mom would core out an apple, almost all the way through, but not quite. Make sure all the seeds are removed and widen the opening a bit. Tear off some aluminum foil and place the apple on the foil. Down into the apple hole, stuff butter, sugar (white or brown), and more butter. Once or twice we also poured in a little clear corn syrup. Wrap the apple tightly and completely in the foil – pull up the corners so the juice will stay inside the package. Place 4 apples in a small square baking pan, and put into the oven…I don’t remember the temp, but probably 350 for 45 minute or so – until the apples are soft. Each diner gets to open their own apple!
