Easy Stuffed Baked Apples

Why make this stuffed baked apple recipe? Well, there are quite a few reasons. Firstly, apples are currently in season so their flavor is at its peak. Secondly, with a crispness to the air, who doesn’t want their house to smell like apples and cinnamon at the first sign of fall?

This recipe is so simple to make and produces enough to keep a whole family happy. Every tender apple half is stuffed with the most perfectly sweet, spiced, and flavorful filling imaginable. It’s a delectable combination of vanilla extract, brown sugar, oats, cinnamon, allspice, flour, and butter. It’s like an apple crisp filling inside an apple — what more could you want?

Now, I’ve mentioned how easy this recipe is. But another one of my favorite things is that leftovers reheat well or make a great addition to a hot bowl of oatmeal at breakfast. I bet you’re ready to get baking now!

Recipe Ingredients

  • Butter
  • Vanilla
  • Brown sugar
  • All-purpose flour
  • Oats
  • Allspice
  • Cinnamon
  • Hot water
  • 4-5 apples

How to Make Stuffed Baked Apples

Mix dry ingredients with melted butter in bowl.

How to Make the Stuffing

Melt butter in a medium-sized bowl and then add all of the dry ingredients: brown sugar, vanilla, flour, oats, allspice, and cinnamon.

Stir until combined.

Stir stuffing until well combined.

Halve apples and de-stem.

Slice each apple in half and remove the stems.

Scoop out the core of each apple.

Using a spoon, scoop out the core of each apple.

Place apple halves in baking dish and sprinkle with cinnamon.

Pour 1/2 cup of hot water into the bottom of a 9×13 baking dish and place the apples inside, with the cut side up.

Sprinkle about a teaspoon of cinnamon over the tops.

Then, stuff each apple with the filling mixture.

Cover with foil and bake for 20 minutes. Remove the foil and bake for another 35 minutes.

Storage

Store leftover baked apples in an airtight container in the fridge for up to 3 days and reheat in the microwave. I don’t recommend freezing leftovers.

Recipe Notes

  • Use dairy-free butter to make vegan baked apples.
  • You can also adapt the spices to suit you. Substitute the ground cinnamon and allspice for apple pie spice or pumpkin pie spice instead. Alternatively, swap the allspice for ground nutmeg.
  • If you like, add a 1/4 cup of chopped nuts or dried fruit. This might be chopped pecans, walnuts, or hazelnuts; raisins, cherries, or cranberries.

    Ingredients

    • 1 stick salted or unsalted butter, melted
    • 1 teaspoon vanilla extract
    • ½ cup light or dark brown sugar
    • ½ cup all-purpose flour
    • ¾ cup old-fashioned oats
    • ½ tsp allspice
    • 1 tsp ground cinnamon
    • 4-5 baking apples
    • ¾ cup hot water
    • 1 tsp cinnamon for sprinkling over apples before filling

    Instructions

    • Preheat oven to 375 degrees.
    • In a medium bowl, melt the butter. Add in brown sugar, flour, oats, allspice, cinnamon, and vanilla.

    • Stir until well combined.

    • Pour the hot water into the bottom of your 9x13 baking dish and place the apples inside, with the cut side up. Sprinkle with the extra cinnamon. Then stuff each apple with the filling mixture until all apples are stuffed.
      ¾ cup hot water, 1 tsp cinnamon for sprinkling over apples before filling
    • Cover with foil and bake for 20 minutes. Remove the foil and bake for another 35 minutes.
    • Serve warm with vanilla ice cream and caramel sauce, or on their own.

    1. Have to laugh about suggestion to serve with a scoop of “good quality” vanilla ice cream! This would be great with anything, even “bad quality” ice cream! Haha!
