Today, I want to talk about fudgey, not too sweet, recipe for banana brownies.  These bad boys are topped with a honey peanut butter icing that comes together in a flash.

 These banana brownies are a great way to use up overripe bananas and they are one of those treats that hit that sweet note without going too far, and fill you up enough to count as an actual snack rather than merely a treat. 🙂 I love desserts like that.

How to Make Banana Brownies

These are simple to make, throw it all together in a mixing bowl, pour batter into an 8×8, then make the icing by simply heating up a single bowl in the microwave and stirring.

My kids love them. In fact, my whole family does. A great recipe to add to your banana recipe arsenal for those days when you hate to let them go to waste but may not be in the mood for banana bread.

Ingredients

  • 2 small to medium ripe bananas
  • 1/2 cup 1 stick butter, at room temp
  • 1 cup light or dark brown sugar
  • 1 cup all purpose flour
  • 1 egg
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • pinch or 1/4 teaspoon salt

for icing

  • 1/2 cup peanut butter
  • 1/4 cup honey
  • 1/2 cup confectioner's sugar

Instructions

  • Place brown sugar and peeled bananas in a medium sized mixing bowl. Beat with an electric mixer until bananas are liquified. Add in all other blondie ingredients. Mix again with electric mixer until fully combined. Pour batter into greased 8x8 baking dish and bake at 350 for 25-30 minutes, or until set in center.

To make icing:

  • Combine peanut butter and honey in a 2 cup measuring cup or small bowl. Microwave at 30 second intervals until peanut butter is melted enough to stir together. Stir until smooth. Add in confectioner's sugar and stir until smooth and creamy. Spread over blondies. Allow to cool before serving.

  1. Christy: Thanks so much for the Banana Brownies. I miss brownies as I can’t have chocolate or nuts any more. I make a very good Apple Brownie, and I’m happy to have your Banana Brownie recipe now. I can make the frosting with Sunflower Seed Butter.

    Re: the typo. I am good at catching them, many times when I don’t really want to, and I’m not looking for them, but they seem to jump up in front of me and make me pay attention to them. Even with your hint, it took me until page 24 to spot it, and I’m not spilling any beans-everyone else will just have to find it on their own.

    Back when I was working, I used to do the cover page for our local veterinary association’s newsletter. I had the software for it, always did a theme and added clip-art to it to spiff it up. One of my bosses was the editor. I had just finished my latest, and handed it to my mother and she thought it looked fine, so I started to print, while she handed the cover sheet to Pops. He said, how come it says xxx? WHAT?! I ripped it out of his hands, looked at it, and I promptly stopped the printing, because sure enough, he had caught a major mistake that would have been mortifying, and that my bosses would have teased me about for years. I can’t for the life of me remember what it was; and I’d kind of like to, but we both missed it, and I had proofread it multiple times. It’s like catching your own math mistakes. Luckily I hadn’t printed but a few covers, so I just fixed it and proceeded on, but I am certainly glad he caught it.

Anything to make you happy, Christy! 8D One of our English teachers in school proofread a handout to us and he had made one mistake in it-which he left in-“poofread, poofread, poofread!” That became a class slogan. I still can’t believe it took me 24 pages to find that. It just goes to show that your brain and eyes can make you read anything you expect to.

  2. I confess to being someone who wrote about the typo. Incidentally, it’s not spelled type-o. I thought the binder pages were lovely and knew that time and energy went into creating them. It just seemed a shame to me that there was a mistake. Yes, I realize I’m not perfect in any way. I doubt I could have created the binder pages. My hope was that the misspelled word could have been corrected without a great deal of effort. My father was a writer, editor, and publisher, and I honestly believe I inherited a love of language and accuracy in the printed word. I’m glad it doesn’t bother you, Christy, or anyone else. I’ll take my licks and go sit in the corner now.

Mama and I had this talk today about how it’s funny how we’re just two different personalities when it comes to things like this and we can laugh at ourselves for something being so stressful to her being nothing at all to me. 🙂 I think the funniest part of this comment is you correcting my use of “type-o”. 😉
