There’s been lots going on on SouthernPlate.com in the last two weeks so I thought I’d bring you a digest of what I’ve been cooking up as well as some of the dishes you’ve been making and reporting on!

Lets start with what you’re cooking!

I had over sixty replies when I asked what you’d been making from Southernplate.com. Thank you to everyone who answered me on Facebook! I’ve chosen a few of your comments to highlight here.

Slow Cooker Fiesta Chicken

Amy Matheson said: I made the slow cooker Fiesta chicken and rice last night. I varied it by not shredding my chicken, just cut the chicken into large chunks and served over rice instead of stirring it in – my 4 year old took a bite and told me “Mommy! you need to make this a lot!!” Anything that gets that response is a hit! We all loved it.

Easy Chicken And Dumplings

  2. Keri- hilarious! We had crunchy beef casserole this week as well (leftovers the next night also) and my hubby has also taken to assuming and commenting “another spot-on recipe from Christy!” after each meal or dessert. Some other SP goodies I’ve whipped up in the past couple weeks- Granny Jordan’s chicken salad casserole (hot tonight, cold for lunch tomorrow!), mud hens, cheesy chicken and rice, pecan pie muffins, apple spice muffins (though I have to admit…both of those were baked in loaf pans. And were still marvelous!), cinnabuns, hoe cake, spaghetti lover’s soup, chicken tortilla soup. Goodness knows there are more I’m drawing a blank on, but ever since I typed “cinnabuns” I got to wondering if I had time to pull out the bread dough to thaw for morning! ha ha 😉 Many more to come this week. In fact, I look forward to filling February with as much Southern Plate goodness as I can! Thank you for spreading the love through these wonderful recipes! You’re part of the family now 😉
