There’s been lots going on on SouthernPlate.com in the last two weeks so I thought I’d bring you a digest of what I’ve been cooking up as well as some of the dishes you’ve been making and reporting on!

Slow Cooker Fiesta Chicken
Amy Matheson said: I made the slow cooker Fiesta chicken and rice last night. I varied it by not shredding my chicken, just cut the chicken into large chunks and served over rice instead of stirring it in – my 4 year old took a bite and told me “Mommy! you need to make this a lot!!” Anything that gets that response is a hit! We all loved it.

This past month I’ve made the Corn Chowder, the Hoe Cake, the Double Chocolate Chip Muffins (so good!), the Squash Casserole, the Cinnamon Rolls (double yum!) and the Slow-Cooked Pork Roast. They were all delicious and turned out really well. However, my crowning culinary achievement for last week was your Chicken Stew! Everyone loved it – it was a big hit!! I’m going to try your Baked Ham recipe on Monday and then I am looking forward to trying Pufky’s Picnic Chicken and Lela’s Fried Fruit Pies next. What do you think – should I do peach, apple or cherry first? 🙂
Ohhh, I guess I would have to opt for Peach. But ideally I would make all 3, LOL. 😉

I have made your recipes at least two or three times a week since I discovered Southern Plate. Next week it’s Crunchy Beef Casserole, Fried Chicken Planks with Comeback Sauce. For dessert: Elvis Cake and Yellow Cake with Peanut Butter Icing. Loved the Baked Macaroni & Cheese and the Hamburger Stew.
I love your Chicken aand Dumpling, I make two recipes and freeze it in Pint Plastic Freezer Jars, so we can have them any time.

We had crunchy beef casserole last night. Tonight….leftovers. Tomorrow…crock pot lasagna. When my husband was eating last night he said “now is this Christy’s?” LOL! Seriously, we talk about you like you live next door. When you were on Today, I DVRed it and was watching and when asked why I told Bryan “that is Christy…I am so proud of her!”
Well I guess I missed the FB post but I just made your baked Macaroni and Cheese and let me say that it got RAVE reviews. I will be tossing my old recipe and using your recipe from now on.
