Pork Tenderloin With Sweet Soy Glaze and Roasted Vegetables

Every so often I find a recipe from my favorite delivery service that I just have to share. Today, that recipe is pork tenderloins with roasted vegetables and a sweet soy glaze. Get ready for succulent and tender pork drizzled in a flavorful sweet soy glaze. The delicious glaze flavor is thanks to soy sauce, two types of sugar and vinegar, and ground ginger. This is accompanied by roast vegetables coated in a delectable garlicky lime butter sauce. Is your mouth watering yet, because mine sure is!

This is a great family-approved weeknight dinner that I could make again and again. Now, don’t be scared by the number of elements in this recipe either. I promise it only takes 15 minutes to prep and dinner will be on the table in under an hour.

Recipe Ingredients

  • 1 poblano pepper
  • 1 bell pepper
  • 2 sweet potatoes
  • 1 lime
  • 2 scallions (green onion)
  • 1 garlic clove
  • 4 tablespoons sweet soy glaze
  • 12 ounces pork tenderloin

HelloFresh Sweet Soy Glaze Ingredients

  • 1/2 cup soy sauce (I use Tamari, which is gluten-free)
  • 2/3 cup brown sugar
  • 1/3 cup white sugar
  • 1/4 cup water
  • 2 tablespoons of white wine vinegar
  • 2 tablespoons of rice vinegar
  • 1/2 teaspoon of ground ginger

Preheat oven to 450 degrees and adjust oven racks to the top and middle positions.

Roast Vegetables

Core, deseed, and dice poblano and bell pepper into about 1/2-inch pieces. Dice sweet potato into 1/2-inch thick pieces. Toss veggies on a baking tray with a drizzle of oil over the top and a pinch of salt and pepper. Roast on top rack, tossing halfway through. Roast until browned and tender, or approximately 20 to 25 minutes.

How to Make Sweet Soy Glaze

Stir brown sugar, soy sauce, white sugar, water, white wine vinegar, rice vinegar, and ground ginger together in a saucepan. Bring to a boil, reduce heat to medium-low, and cook until reduced in volume by half, or about 30 minutes. Let glaze cool to thicken, which will take at least 1 hour.

Zest and quarter lime. Trim and thinly slice scallions, separating whites from greens. Peel and mince garlic.

In a small bowl combine the glaze, 2 tablespoons of water, and a squeeze of lime juice to your liking.

Cook the Pork Tenderloin

Pat pork dry with a paper towel and season with salt and pepper. Heat oil in a pan over medium-high heat. Add the pork and sear sides, turning occasionally, until browned all over. This will be about 4 to 8 minutes. Turn off the heat, transfer to another baking sheet, and roast on the middle rack until cooked through, or about 12 to 15 minutes (165 degrees, can use a thermometer to check). Remove from oven and let rest for 5 minutes. Thinly slice.

Make Garlic Butter

Place 1 tablespoon of butter in a microwave-safe bowl and microwave until melted. Stir in a pinch of garlic and lemon zest. Add salt and pepper and pour generously over the roasted veggies.

Cook Sauce

While pork rests, heat a pan over medium-high heat with oil. Add scallion whites and remaining garlic. Cook until aromatic, stirring for 1 to 2 minutes. Pour the glaze and cook for 1 to 2 minutes until slightly thickened.

Serve

Top pork with sauce and scallion greens. Serve with remaining lime wedges.

Storage

You can store leftovers in an airtight container in the fridge for up to four days or in the freezer for up to three months. To reheat, either warm your meal in the microwave or on the stovetop.

  • This recipe is for two people, but simply double the quantities to make this into a great family dinner.
