At Last! Today is the debut of Quick Fix Suppers, the video series I’m hosting on SouthernLiving.com. I’m so excited to bring you this series, and especially today’s recipe! Since filming these a few weeks ago, I’ve lost count of how many times I’ve made the recipe I’ll be showing you today. It’s just that good (and so very simple). At the end, you’ll see the coolest tip, too!

I loved the video. You are a natural. The muffin tin tip will help me a lot with my 3 grandkids since tacos is one of their favorite meals and they all like them topped differently and want me to make them! Such a good job!

I watched all your videos and loved them. Just wondering how to be able to ask a question for the quick fix suppers. I have a challenging one. I know someone who lives in a hotel and only has a fridge and microwave. What would be a quick fix supper that you would suggest using just a microwave?
Great video. I wish we were going to be home tonight just so I could make tacos. But, I’m going to marinate some chicken tonight, so we can have them tomorrow.

What a great job and yummy recipe!! I love how you gave options on different “meats” that you could use for this. Thanks for the tip on letting your marinated meat set out a bit before grilling to cook more evenly.. I always put it on right out of the fridge and now I have hopefully solved the mystery of un evenly (is that word??) cooked meat!! Loved the muffin pan upside down tip! This will save a lot of clean up for me, my little one loves to “help decorate” the tacos in our house 🙂 Thanks for taking the time to do this, I look forward to tuning in for many more!
