YUM Recipes for Memorial Day
You don’t have to slave over a grill for tender and delicious ribs!
Pulled pork barbecue is pretty much heaven on a bun as far as I’m concerned and it seems every region has their own way of doing it. Where I am from, the barbecue is smoked and juicy, served as pictured here or with a little bit of clear mild vinegar sauce poured over it, perhaps some of our white bbq sauce. In my husband’s home its served slathered in a thick layer of sweet red barbecue sauce, like the bottled sauce you buy in the stores.
This recipe makes it easy with the help of a slow cooker.

I have a sweet tooth big enough to take over my entire mouth but I can’t eat sugar, at least not in anything other than small quantities. So I adjust a lot of dessert recipes to make them lighter or sugar free altogether. This is one recipe that works really well and is every bit as decadent and refreshing whether you make a regular or lighter version.

Your post was just in time for our Memorial Day camping trip to Balsam Mountain in the Great Smoky Mountains! I made the pulled pork in the crockpot, the macaroni salad with bowtie pasta (because that’s all I had), and the vinegar cole slaw. It was all a hit – and was a perfect meal for camping. All we had to do was heat up the pulled pork, add a little BBQ sauce and top it with vinegar cole slaw for scrumptious sandwiches. Thanks for your perfect meal plan for our weekender!
Oh – I forgot to add that I baked the Strawberry Bread for our breakfasts (without the pecans) and my husband and I both loved it. He even told me to add this recipe to our list…great compliment! YUM

My mom loves macaroni salad! I can’t wait to make this for her! I don’t have any pimentos though, I wonder if I can substitute olives with pimentos in them, hmmm… On second thought, I think I’ll just go out and get a jar of pimentos, lol! : )
